Yes, you absolutely can!
Opt for a single-color LED strip instead of a standard RGBW strip if that works better for your smart home goals. Instead of using all channels on the ZEN31 dimmer, you'll just connect the strip to the appropriate color channel terminal. If you'd like to use multiple single-color LED strips, you can use the other channel terminals for that as well and you'll still have individual control of each strip. Just remember to keep the strips within the total power rating for the dimmer. That's 120 W total when powered by 12V DC and 240 W total when powered by 24V DC.
After you connect the dimmer to your Z-Wave hub, the individual strips will display as red, white, blue, and green by default. You'll need to re-name them according to their actual colors in your Z-Wave interface.
If you'd like to control only white LED strips that have a spectrum of warm white to cold white, you could do that as well. To control all white channels, you would use the channel dimmers in your Z-Wave app rather than the color wheel.
